Cochinita Pibil Taco 3.75

Achiote pulled pork topped with pickled red onion, habañero & cilantro.

Cohinita Pibil is a traditional Mexican slow-roasted pork dish from the Yucatán Peninsula. Preparation of traditional cochinita involves marinating the meat in strongly acidic citrus juice, adding annatto seed which imparts a vivid burnt orange color, and roasting the meat while it is wrapped in a banana leaf.

Chapulines & Mezcal 10

Toasted Mexican grasshoppers, served with a mezcal shot.

Chapulines are grasshoppers, common street food in many areas of Mexico. They are collected only at certain times of year (from hatching in early May through late summer/early autumn). They are toasted on a comal and seasoned with garlic, lime juice & salt, sometimes with an extract of maguey worms, lending them a sour-spicy-salty taste.
